This might not be an issue in 1997 model sierras but it is in mine ('96 Sierra). If it cut out when you took your foot off the accelerator and had the clutch disengaged (IE; changing gears) I'll bet that its a spark plug or it's cord has worked itself loose and isn't firing. It's happened twice in the life of my car and I'd expect a recent service would prevent this, but everyone makes mistakes, even car mechanics.
I have had my car cut out 4x4ing though and I had to let it sit for about 15 mins and had to roll downhill to get it to keepo running, it wouldn't run unless teh clutch was engaged forcing it to keep turning over. But it stopped being a pain once I made sure all the plugs were pushed in and drove for a while on the road. Just an idea though.
