I do so love the rotary mill. In stock guise even the TT is fairly tame but with some basic porting and turbo/exhaust work these things are spooky as hell. It's worth pulling apart when you have the engine out if there is any doubt as to the condition of the apex seals. Did his car run well?
I recently searched and came up empty on a premade kit but I do believe transdapt may have something, I think your making the mounts but the rotary is a pretty small engine so space is not a real concern. Ample cooling should be considered, my rx7s always tended to run a touch warm on hot days. I had an rx3 with a 13b and a 7 with the same mill, one with a street port and aftermarket turbo setup. dayum tho I could chew holes through the vast majority of V8 powered cars with noooo trouble at all. Consider how much power you want and how much the Samurai drivetrain will handle, I have never pushed more than 110 hp through a samurai so the input of others will be valuable here to. My TT rx3 (tt rx7 mill) was WELL over 100hp with the mods.
This has been done, several times, some great results on youtube and I hope someone here that has done it can be more specific with you as far as where to source or how to make the bits all go together. If you end up passing the car along email me first!!
Do remember that the rotary makes its power/torque higher up and revs silly high so gearing may be a concern depending on what your doing with the vehicle. If it spends a great deal of time out on the rocks I might think twice about a rotary but for any other use I think its awesome.
Truthfully, even though mine is a crawling rig as well as a daily driver... if someone up and gave me a 13b TT it would be in my Samy by next weekend after some porting and intake/exhaust work. Expect very high exh temps, esp w/turbo, also they totally suck on fuel so if economy is a concern than stay far away. If using offroad you will need to pay plenty of attention to spark arrestors and exh system as these things can shit flames pretty regularly.
I'm actually excited for you as I have been mauling this over and looking around CL for a doner car. I'm going rotary or L20b eventually, even though the L20b makes more sense I would love to find the doner vehicle that just fell into your lap. The L20b would make more sense for me but I could not say no to a rotary. Research the cons of a rotary, there are a few notable drawbacks

im hesitant because i love the mud, so it would probaly be changed to N/A and sell the turbos for a super, and its out of an rx-7 he totaled, fairly new jdm motor, he ordered it and installed it, the put the car into a wall. if i could ship a non running car home, or 2 cars home, i would just keep the rx-7 and fix her up, but i cant, stupid military cuts. i might just cratethe motor exhaust and tranny, the scrap the rest, and find a car back home to convert to rotary, possibly and rx-7 that has been scrapped due to the motor being pulled.
