I'm also 'down-under', in Perth!
I have a 2000 'A'-Van Sportliner (smallest now available) unloaded weight 500Kgs, loaded approx' 750Kgs.
My towing vehicle is a 2000 Suzuki Jimny (Manual, much better for towing!) Rated towing capacity for the Jimny is 1,200Kgs. I have a Reece towing hitch, rated at 1,100kgs)
The Jimny tows very well, because of the lower 4wd gearing. I cruise at 80Kph, which equates to 3000Rpm, in top gear. When the engine rev's drop, I change down, keeping the rpm to at least 3000.
Cruising at 80Kph I use 10 litres per 100kms (28 mpg). Using the air-conditioning I use 10.5 litres per 100kms (27 mpg). Of course, these figures can & do vary according to terrain & weather.
The combination of Jimny & Sport-Liner is a good one, providing one is content to cruise at 80kms! The Jimny will tow at a faster rate but fuel consumption increases accordingly!
Hope this helps
