Default Samurai over heating

I have a 1986 samurai i use off road only. It is running hot by the gauge.I took thermostate out and after runnig it for a while the gauge burys on the hot but it never boils over and never pushes water out of over flow i also took stock fan off and instaled big electric fan that i run all the time could gauge may be messed up what is normal operating temp thanks

First verify that the engine IS running hot with and independent gauge or with the use an IR temp sensing gun.

If overheating, I'd suspected a fouled radiator most predominantly.
