Default help, motor problem

Hello, I am the new owner of a 94 metro xfi. The motor runs fine, but sometimes when you let up on the gas or you are coasting it seems to back off. When you give it gas it kicks in again, or if you keep your foot on the same place when the speed drops to where your foot is on the gas it will kick in again. Also it seems to do it if your on the gas and don't shift at the right time it will go in and out. Just tuned it up also and no difference. Nobody seems to know.
Also I took her to a shop today to replace the left front wheel bearings. They ended up not having the seal, but I got different stories about what wheel bearing it needed. My book and on the net shows 2 bearings an inner and outer. Schucks sold me one thin sealed bearing. When I brought it to the shop they told me it was the wrong one and it was a fatter bearing but only one. Which is it? Any help on these two issues would be a help.
Ps the shop wanted 3.5 hours of labor to change the bearing. is that right?

heh...think one bearing in the front should not take any longer then 2 hours
