Im wondering if replacing the ignition coil will help out with the lacking of power. Ive put Bosch red and blue coils on my cars in the past, and was wondering if they will work on the samurai, or if there is another good coil to use

I have used an MSD Blaster 2 coil for years. Has never let me down.

It would help but you also need to make sure the spark plugs / cable are also upgraded the maximize the new coil. Not to mention, exhaust header and so forth.
