We used to chop em up to build sandrails. We had a nice little enterprise going so we were always looking for donor cars. A freind of mine had a 64 with the 1500cc engine and when it died instead of selling it to us to chop up we gave a built 1935cc bus motor. He put twin Solex carbs and intakes on it borrowed from a porsche 914. Respectably fast.
You beetle people need to click the attachment below.
We used to have one of these hanging in the shop.

duct tape, super glue, gorrila glue, fishing wire, and a coat hanger were used to modify everything from the engine to the enterior...

the duct ape held one of the spark plug wires in place because it would fall off going around a corner too fast.

i also used a shaved down dime and some gorilla glue to fill a hole in te carb, a piece of metal fell out and i couldn't find anything to replace it.
its safe to say ive done my fair share of ghetto.

but my dad is a holy vw priest. he as restored and sold five, so far. he owns two that he loves, and right now he has his hands on a 67' which he keeps telling me is a rare year.

i keep telling him a want a damn sand rail.....

you don't have to comit sacralige, all you need is the engine, transaxle, steering column and front axle, he can keep whats left on blocks. My Baby was built with a turbo 911 engine and transaxle and wore 36x18.5 knobbie tires and would pop the nose off the ground doing 30 if you spooled her up. I traded a 77 chevy 3/4ton 4x4 and a Yamaha Virago for the engine and trans. Man that thing was hell on the dunes.

one hint. Don't go cheap on the sheet metal or the steel mesh. Know a guy who put some cheap flimsy mesh in the sides. Lets just say an abrupt stop at a blown down pine resulted in a 2" dia piece of stick stuck sideways threw his left thigh. Im talking right next to the bone and all the way in and out. OOOOOOOOOOOOOOOOOuch!
